A family favorite, this recipe is handed down from generation to generation. A rich, airy treat that is best when served hot topped with jam, jelly, fresh berries, whipped cream, and even Nutella.
I first had this delicious pancake while visiting my aunt and uncle in Finland when I was in middle school. It was an evening snack served with all sorts of fresh picked berries and ice cream. When I took my own kids to visit Finland last summer, my aunt made this special treat again and the whole family loved it! My uncle told us that he remembers eating this meal on Thursdays with pea soup when he was younger.

Finnish Pancake (Pannukakku)
Ingredients
- ½ cup butter
- 1 cup white sugar
- 4 eggs
- ½ teaspoon vanilla
- 2 cups whole milk
- 1 cup all purpose flour*
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- powdered sugar (for dusting)
Optional Toppings: jam, jelly, whipped cream, fresh berries, Nutella, maple syrup
Instructions
- Preheat oven to 400℉
- Cut butter into tablespoon sizes pieces. Place butter pieces in 9×13 inch baking dish and put in pre-heating oven to melt*
- In a medium bowl, whisk together the sugar, eggs, and milk. Add flour, baking powder and salt. Mix to combine so there are no lumps, but avoid over-mixing.
- Once the butter has melted, tilt the baking pan to coat the bottom and sides with butter, then pour the excess butter into the batter, and gently mix until combined. Pour the batter into the prepared pan.
- Bake for 25-30 minutes, until puffed up on sides and golden across top. Dust with powdered sugar and serve hot.
